The Cevennes are the land of the chestnut tree, the famous "bread tree", the fruit of which forms the basis of numerous culinary preparations : milk or wine based chestnut soupe (bajanat), jam pate, cake, biscuits and bread etc. They are also the land of the famous Pelardon, the goat milk cheese which obtained an AOC label*, cooked dishes (beef, pork, duck, trout), jams made from fruits of the forest( bilberries, wild strawberries, blackberries and raspberries)...
*Indeed several national (AOC) or European labels are devoted to the quality of local farm produce according to the farming methods, the areas used and the breeds traditionnally raised.
